10th January is the National Bittersweet Chocolate Day celebrated in United States of America. It is a fun day to celebrate the time when cocoa beans were first cultivated and Europeans discovered its use in the deserts. Thus now we have our All-time favorite treat "Chocolate" derived from cocoa beans as cultivated by the Europeans.

History of Origin

The Chocolate we now know is milk chocolate with loads of unhealthy carbohydrates and sugars to sweeten the flavor of chocolate and milk to develop the taste. But centuries ago, when cocoa beans (the main ingredient of a chocolate base) was discovered, it was bitter in taste with the many health benefits. 

Originally, chocolate was made from the seeds of the tropical Theobroma cacao tree. Cacao was first cultivated in Mexico, Central America, and northern South America at least three millennia ago. The earliest documented use of cacao seeds dates back to approximately 1100 BC. Early ancestors of cacao cultivation were the Olmec Indians who grew cocoa beans for domestic consumption. Columbus brought cacao seeds back to Spain from Central America on his voyage. US-based Bristol Company Fry & Son produced chocolate bars for the first time in 1847. Cadbury, the chocolate brand we know today, was founded in 1849 by John Cadbury when he introduced his own brand of chocolate bar.

How it is made?

Cacao tree seeds have a strong bitter taste and need fermentation to become palatable. The seeds are fermented and then dried, cleaned, and roasted after they have been cleaned. The chocolate nibs are then removed from the shell after roasting. A cocoa mass is then ground from the nibs, yielding pure chocolate in its raw form. In most cases, the cocoa mass is liquefied and then molded either with or without other ingredients. We call this chocolate liquor. The chocolate liquor is then separated into two components: cocoa solids and cocoa butter.

It's good for your health to consume bittersweet chocolate occasionally. It is known that the antioxidants present in bittersweet chocolate increase blood flow, lowering blood pressure as HDL cholesterol is raised and LDL is protected from oxidation. As a result, Bittersweet chocolate can boost your cardiovascular system.
