Marzipan is mainly composed of sugar or honey and ground almonds, sometimes enhanced with almond oil or extract. The candy is frequently filled with chocolate, turned into imitation fruit and vegetables, or made into thin sheets of glaze to decorate cakes. This special treat is considered so unique that both the Persians and the Italians claim to have invented it. While with name 'Marzipan', it might be hard to remember the name of this sweet treat, its flavor is absolutely incredible. 

History

Several origins can be traced back to its history. Several countries claim to have produced the idea of a paste made from sugar and almonds and claim the recipe to be theirs. Therefore, the first Marzipan creation is disputed among many countries like Persia, Hungary, and Germany. It is said that the Turks introduced marzipans to Europe. In Spain, marzipan first appeared during an epic Spanish battle in the 13th century. Marzipan is generally credited to Lübeck, Germany. When bread flour became scarce during the 15th century famine in Lübeck, the Senate ordered bakers to make a replacement. By combining eggs, sugar, and almond stores, the clever bakers made marzipan. The Niederegger in Lübeck Germany popularized marzipans. In Estonia, marzipan is considered one of the oldest sweets, and it was believed to have healing properties. Marzipans were first old in the Town Hall Pharmacy of Tallinn as a medicine. 

How it is made?

Marzipan is made by cleaning and blanching raw almonds, which are then spun in rotating cylinders to remove the skins. Following the coarse chopping of the almonds, 35% of sugar is added to the ground almonds to form a paste. These almonds are then roasted again and cooled. Adding sugar and binding agent gives the final texture a flexible texture that can be shaped almost into anything - usually fruit or vegetables.
